Since 2017 the team at Foron Rex have used the best ingredients possible and age-old methods as a bedrock for freshly baked goods, all in the interest of giving artisanal baking its true meaning. Foron Rex makes both Local & European style bakes that rely on a natural fermentation method which emphasizes a levain or starter - a mix of flour and water that produces an acidic culture (lactic acid and acetic acid). The benefits of natural fermentation allows for a longer shelf life, easier digestion as well as a higher nutritional value for each product.
