We are looking for a Head Chef for a Greek/Mediterranean Cuisine to join immediately.
The selected candidate is responsible for all food production including that used for restaurants and other outlets. Develop menus, food purchase specifications, recipes and monitor food and labor budget for the department. Maintain highest professional food quality and sanitation standards
Responsibilities
- Experience in working with recipe manuals.
- Ensure the consistency in food production during preps based on recipe manuals.
- Ensure smooth service during operation and consistency on the final plated dish.
- Lead a kitchen team, with the ability to aspire motivation.
- Ability to multi-task and effectively manage relationships at all levels.
- Ensure communication between BOH and FOH (specials, briefing, tastings).
- Staff hiring, management, training, evaluation, driving and maximizing staff retention.
- Kitchen administration, including staff Rota, order sheets, prep sheets and recipe sheets, with experience in using Microsoft Office.
- Prior experience in labor costing and payroll administration.
- Aware of food cost software.
- Aware of recipe software.
- Manage orders and stock control.
- Food waste monitoring.
- Awareness of kitchen cooking sections.
- Ensure hygiene and cleanliness standards adhered by all kitchen staff.
- Oversee kitchen maintenance and repairs.
- Assist kitchen staff in sections.
- At times the role will require to step in and cover any junior position in the kitchen.
- Knowledge of menu pricing.
- Deal with suppliers.
- Ensure the supply of high-quality goods at best possible market prices.
- Aware of products’ quality.
Qualifications
- Proven working experience as a Head Chef for more than 5 years
- with Greek/Mediterranean Cuisine experience is mandatory
- Pre-opening of a new business set up experience
- Advance culinary skills including food preparation, flavor preparation, flavor pairings, and other cooking best practices.
- Excellent record of Kitchen Management
- Must have experience in developing / creating new Menus & concepts.
- Holding excellent record of kitchen management & expert in Staying current on developing trends in the restaurant industry
- Bachelors Degree in culinary science or related certificate
- Working knowledge of various computer software programs (MS Office, restaurant management software, POS)
- Must be locally available in QATAR with valid Qatar ID.
